Tuna tartar with quail egg

Seared Foie Gras with Ravioli with duck three ways (foie gras, confit, roasted)

Arctic Char

Scallop stuffed with mushrooms, eggplant drape, lobster cream

Lamb, Parsley Mashed potatoes, Basil flan

Cheese course

Dessert sampler including Chocolate Macademia
