Tuna Tartar Spoons

Ingredients

Ahi Tuna
-- FIRST GROUP --
French green beans cooked
1/2 each Green pepper
1/2 each Yellow pepper
1/2 each Red pepper
Nicoise olives
Tomatoes blanched & skinned
Red potatoes cooked
Extra virgin olive oil
-- SECOND GROUP --
Red onion diced
Anchovies chopped
Parsley chopped
Egg hard-boiled and chopped
Vinaigrette dressing


 

Instructions
Dice tuna. Keep cool.

Dice the first group of ingredients very small and mix together

Mix the second group together with some vinaigrette.

At the last moment, add tuna to the first group, some extra virgin olive oil, salt, and pepper to taste.

Place in bouillon or Miso spoon and add some anchovy dressing on top; maybe a little parsley too.

Pass the tray of spoons to your guests.
