Salmon Burgers with Hosin and Ginger

Ingredients

1 pound Salmon Fillet Boneless Skinless Cut Into 1" Pieces
1/4 cup Cilantro Leaves Fresh
2 tablespoon Hoisin Sauce
2 tablespoon Mayonnaise
1/4 cup Green Onions Chopped
2 teaspoon Fresh Ginger Peeled Minced
1 clove Garlic Minced
3/4 teaspoon Salt
1/2 teaspoon Ground Black Pepper
2 1/2 teaspoon Sesame Oil
4 ea large Hamburger Buns Sesame-Seed
to taste Additional Hoisin Sauce
to taste Additional Mayonnaise
8 ea Butter Lettuce Leaves


 

Instructions
Place salmon, cilantro leaves, hoisin sauce, and mayonnaise in food processor. Using on/off turns, blend until coarsely ground. Transfer mixture to medium bowl. Mix in green onions, ginger, garlic, salt, and pepper. Form into four 1/2-inch-thick patties. Cover; refrigerate at least 1 hour and up to 4 hours.

Heat sesame oil in large non-stick skillet over medium heat. Saute patties until fish is cooked through, about 3 minutes per side. Meanwhile, toast hamburger buns. Spread bottom half of bun with additional hoisin. Spread top half of bun with additional mayonnaise. Transfer burgers to bottom halves of bun; top each with 2 lettuce leaves and top half of bun.
