Ingredients
2 tablespoon Garlic Minced
4 tablespoon Sun-Dried Tomato Paste
1/4 cup Olive Oil
1 teaspoon Freshly-Ground Black Pepper
1 teaspoon Salt
1 tablespoon Fresh Basil Chopped
1 tablespoon Fresh Parsley Chopped
2 Whole Chickens - 3 Lbs Ea
Instructions
Preheat oven to 375 degrees. Combine the sun-dried tomato paste, garlic, olive oil, pepper, salt, basil and parsley in a small bowl. Rub the insides and out of chickens with mixture. Roast chicken for 40 minutes. Cool for 30 minutes, then into the refrigerator to cool completely, about 2 hours.
