Pate a Choux

Ingredients

1/2 cup Water
3 tablespoons Unsalted butter
1/8 teaspoon Salt
1/2 cup All purpose flour
2 each Eggs large


 

Instructions
Preheat oven to 400 degrees.

Combine the water, butter and salt in a saucepan over medium heat and bring to a boil, stirring occasionally.

As soon as it comes to a boil, remove from the heat.

Sift in the flour, stirring with a wooden spoon to combine smoothly.

Return to the heat and cook, stirring constantly, until the paste dries slightly and begins to leave the sides of the pan.

Transfer the paste to the bowl of a stand mixer and stir with a wooden spoon for one minute to cool slightly.

Add eggs, one at a time, beating with the mixer each until it is absorbed before adding the next.

Pipe the pastry onto a lined baking sheet into mounds the size of large cherries.

Bake for 20 minutes.

Cool completely.
