Goat Cheese in Crackling Caramelized Sugar

(Queso de Cabra en Azucar Cruijiente)

Candied caramelized sugar lends a delightful contrasting texture and slight sweetness to the goat cheese. It is also used to give a lovely glaze to the red grapes that garnish each plate.

Ingredients

6 (1/2" slices) Goat cheese cut from a 6-ounce log
1/2 cup Sugar
1/2 cup Water
6 each Red seedless grape clusters


 

Instructions
Place a slice of the cheese on each of 6 individual dishes. To make the candied sugar, stir the sugar and water in a heavy small saucepan over medium heat until the sugar completely dissolves. Raise the heat and boil, without stirring, until the mixture turns light amber, occasionally brushing down the pan sides with a wet pastry brush and swirling the pan, about 6 minutes.

Remove from the heat and quickly add the grapes, one cluster at a time, to the caramel. Using a slotted spoon or long fork, transfer the grapes to a greased cooling rack placed over a baking sheet to catch any drippings, and gently separate the grapes into clusters before the sugar hardens.

Dip a spoon into the caramel and drizzle over the goat cheese.
