Crunchy Spiced Chicken

This recipe cooks in the microwave and is perfect for those days it is too hot to turn on the oven.

Ingredients

2 cups Herb-Seasoned Stuffing Mix Finely Cru
1 1/2 teaspoon Garlic Powder
1 1/2 teaspoon Pepper
3/4 teaspoon Paprika
1/2 teaspoon Poultry Seasoning
1/2 cup Skim Milk
1 ea Egg Beaten
4 ea 4 ounce Chicken Breast Skinned See * Note Below


 

Instructions
1. Combine stuffing mix, garlic powder, pepper, paprika, and poultry seasoning in a large plastic bag. Shake to mix. Set aside.

2. Combine milk & egg. Mix well and set aside.

3. Place a piece of chicken in bag. Shake well, dip chicken in egg mixture, return to bag, and shake again. Repeat procedure with remaining chicken. Press coating into place, if necessary. Place chicken, bone side down, on a microwave roasting rack, arranging meatier pieces to the outside. Cover with waxed paper. Microwave chicken at high for 10 minutes.

4. Rearrange chicken so lesser-cooked pieces are to the outside.

5. Microwave on high 8 to 11 minutes or until juices run clear and meat near bone is no longer pink.

* NOTE: Can use skinless, boneless flash-frozen chicken in a bag.
