Chocolate Sponge Cake (Pan di Spagna alla Cioccolata)

Ingredients

12 ea Eggs
12 ounces Sugar
9 ounces Cake Flour
2 ounces Cornstarch
2 ounces Cocoa Powder
1 teaspoon Baking Soda
1/4 cup Butter Melted


 

Instructions
Preheat oven to 350.

1. Beat the eggs and sugar over a hot water bath until 110 degrees.

2. Remove from the heat and continue to beat at high speed until thick and at room temperature.

3. Sift the flour, cornstarch, cocoa powder, and baking soda together several times and fold into the egg/sugar mixture with a spatula. Gently stir in the melted butter.

4. Pour the batter into buttered and floured 10-inch cake pans, and bake in a preheated 350 oven for about 25 minutes. Cool.
