Chicken Burgers Duxelle

I created these chicken burgers using minced, sauteed, and spiced mushrooms to keep them from being dry. They're so good that I've converted more than a few die-hard red-meat lovers.

Ingredients

3/4 pound Portobello mushrooms about 3 large
1 tablespoon Unsalted butter or olive oil
3 tablespoons Pleasures spice mix divided, recipe in this collection
1/4 cup Shallots minced
2 tablespoons Fresh ginger minced
1 tablespoon Garlic minced
1/4 cup Dry vermouth (or white wine or chicken broth)
2 tablespoons Panko breadcrumbs (or fresh breadcrumbs)
1 pound Ground chicken (or turkey)
2 tablespoons Olive oil
4 slices Pepper jack cheese (optional)
4 each Hamburger buns toasted


 

Instructions
1. Scrape the dark gills off of the underside of the mushroom caps; discard. Coarsely chop caps. Process in food processor until finely chopped. You should have about 5 cups.

2. Melt butter in large skillet over medium-high heat. Add mushrooms; cook 6 to 8 minutes or until most of the liquid has evaporated. Add 2 tablespoons of the Pleasures Spice Mix; cook 1 minute. Add shallots, ginger, and garlic. Cook 2 minutes. Add vermouth; stir to scrape up browned bits from bottom of skillet. Cook 1 minute or until almost all liquid has evaporated. Remove from heat; stir in panko. Cool completely, about 15 minutes.

3. In large bowl, stir together chicken and mushroom mixture. Shape into 4 (4-inch) patties. Season both sides of patties with remaining 1 tablespoon of Pleasures Spice Mix.

4. Heat 2 tablespoons oil in large nonstick skillet over medium heat. Add patties; cook 15 to 18 minutes or until no longer pink in the center, turning once. Reduce heat if burgers brown too quickly. Top with cheese, cover skillet to melt cheese. Serve on toasted buns.
