Basil Salmon on Puff Pastry

Ingredients

4 each Salmon fillets
1 each Tomato ripe
to taste Sliced almonds
to taste Basil pesto store-bought or make your own (see note)
1 sheet Puff pastry thawed if frozen
to taste Salt
to taste Pepper freshly ground


 

Instructions
Preheat oven to 400.

Unroll the puff pastry and cut into pieces just a bit larger than the size of each salmon fillet.

Season salmon with salt & pepper

Put puff pastry pieces on a foil-lined tray.

Set salmon pieces next on same tray, leaving room between salmon and puff pastry.

Top the salmon with sliced almonds.

Bake for 10 minutes.

When puff pastry is golden brown, remove it to a plate. Top with some of the basil pesto and tomato slices. Set salmon on top and serve.
